Caprese Salad

This is an ultra-simple and flexible recipe. But because of its simplicity, it's essential that you seek out only the freshest, best quality ingredients. If you can't find the red butter lettuce I used, try French Crisp, Red Oakleaf, or Lollo Rossa. Any of those varieties will be delicious, and will provide a crisp and delicate contrast to the creamy mozzarella and the juicy tomatoes.

Ingredients
  • 1 head organic lettuce
  • 2 large organic vine-ripe tomatoes
  • 8 ounces fresh mozzarella
  • Several sprigs of fresh organic basil
  • Organic olive oil
  • Freshly ground black pepper
  • Freshly ground sea salt
Instructions
  1. Wash as much lettuce as you need and dry it carefully. I like to use the whole leaf rather than tearing it up into bits.
  2. Slice the tomatoes using a separated knife.
  3. Slice the ball of mozzarella, making sure you have enough slices to layer one on each tomato slice.
  4. Remove the leaves on your basil sprigs.
  5. Layer the lettuce, tomato, basil, and mozzarella on a chilled salad plate.
  6. Drizzle with olive oil, and season with salt and pepper.
  7. What could be easier - or more delicious?
