An easy green smoothie even a kale-hater will love

Optimized-Kale Pineapple Smoothie

My son Nick is not a kale fan.

Of course, how many red-blooded 23-year old American guys are?

But he when I asked him if he was willing to drink a kale smoothie with some fresh pineapple that was left from my delicious stir fry with Gardein Sweet & Sour Porkless Bites, he was at least willing to give it a try.

Here’s the text he sent when he got to the office on Monday morning:

“OMG this is easily the best kale smoothie I think I’ve had in my life!!”

Nick has never been a breakfast fan – but now that he’s in the working world, he’s slowly realizing that he needs good nutrition to power him through the morning – or else he’ll be eating his sandwich at 10:15 am!

After sampling several protein powders for smoothies, we’ve decided that Whole Food’s 365 Everyday Value Whey Vanilla Protein Powder delivers 16 grams of good tasting  protein at a reasonable price. The powder mixes in well, and doesn’t leave a chalky after-taste in your mouth (like some other whey protein powders do). I like it because it is low in sugar (1 gram per scoop). There are no soy or gluten ingredients, and while I wish it was  organic, at least  the whey powder comes from milk produced by cows not treated with rBGH.

The good news is that pineapple is number three on the list of the Clean Fifteen (the fifteen conventionally grown fruits and veggies that are least likely to have pesticide residue), and one large pineapple will yield about 4 to 4.5 cups of chunks (which is why I had some left from my stir fry).  And remember, if fresh pineapple is on sale, you can always freeze the cut-up ripe pineapple, and have enough to make a whole boat-load of smoothies in the coming weeks. (Just eliminate most of the ice cubes in my recipe if you substitute frozen pineapple.) 

Provided you already have your fresh pineapple cut, this smoothie will take you less than three  minutes to assemble and will keep you going strong until lunch!

Ingredients
  • 1 organic banana
  • ¾ cup pineapple chunks
  • 4 organic lacinato kale leaves - stemmed and torn into pieces
  • ½ cup organic orange peach mango juice (Harris Teeter)
  • Scoop of Whole Foods 365 Everyday Value Vanilla Whey Protein Powder
  • 2 teaspoons raw local honey
  • 5-6 ice cubes
Instructions
  1. Put all the ingredients in a blender and buzz until smooth (about 30 seconds).
  2. Enjoy!
