Bangers and Mash is a classic British dish. Even if you’re not a Brit, what carnivore wouldn’t love a huge mound of creamy mashed potatoes, topped with a sausage or two? Talk about the ultimate comfort food!
When I started researching this recipe, the unifying factor seemed to be delicious onion gravy. As I compared recipes on the Internet, I was struck by the fact that I had unconsciously created a version of this dish with my French Onion Brats in Fool a Carnivore.
As I analyzed countless versions of “onion gravy,” I realized that I could create a scaled-down version of my favorite homemade onion soup that would serve as the backbone for this dish.
Since I was going to be in and out of the house today, I used my new Cuisinart “Cook Central” 4-in 1 Multicooker to good effect. I was able to slowly simmer my onions in extra virgin olive oil for the sauce, and then crank it up to Brown/Sauté function when I got back and added the tiny bits of salt and sugar that convert ordinary sautéed onions to truly glorious caramelized onions. After I got my onion gravy just the way I wanted it with judicious additions of flour, vegetable stock, red wine, sage, thyme, sea salt, and pepper, I put in my Tofurky Kielbasa, bathed them in the onion gravy, and turned down the heat on the slow cooker to warm. Then I went for a refreshing late afternoon walk with my husband before dinner.
When I got back, I mashed the potatoes that I had cooked before I left on my walk (check out Fool a Carnivore for my favorite recipe for garlic mashed potatoes), cooked some frozen organic baby peas, and got ready to plate.
This was a dinner that had a minimal time investment that gave us maximum payoff in terms of flavor and satisfaction. My carnivore husband gave it a 9.5!
