When people tell me they like eating less meat but need to be gluten-free, I tell them about Beyond Meat. Great tasting, vegan, gluten-free, non-GMO – what more could you want?
I re-imagined one of my favorite pasta recipes with Beyond Meat’s Chicken-Free Strips tonight. I’m learning to cook with them more successfully, and am developing new recipes to showcase them. (Stay tuned for my next e-book!)
This was a cavatappi pasta with garlic, crushed tomatoes, freshly diced tomatoes, vodka, crushed red pepper, light cream cheese, herb garlic Alouette, freshly ground black pepper, sea salt, with freshly grated Parm. I served it with roasted green beans, red onions, and yellow squash. It was a delightful easy meal for a Meatless Monday – but hey, any day of the week can be a Meatless Monday for me!
