I love Independence Day! It’s a special day to reflect back on the origins of our country’s freedom and the courageous people who have fought to preserve it.
All over the United States, families and friends are getting together for cookouts, picnics, ball games, band concerts, boating, fireworks, and patriotic revelry.
Too often those of us who don’t eat meat (or who just want to eat less meat) are resigned to eating the baked beans, pasta salad, and cole slaw.
With the great meatless products on the market, there are plenty of better options.
For a tasty alternative to meatless burgers or hotdogs, why not consider barbecued chicken? I like shredding Beyond Meat Chicken-Free Strips with my box grater. I used the Lightly Seasoned variety so that it wouldn’t compete with the tanginess of the barbecue sauce.
I plan to re-make this dish using my own home-made barbecue sauce recipe, but last night I resorted to a jar of Sticky Fingers Memphis Original Barbecue Sauce in my pantry. The beauty of the Beyond Meat products are that they really don’t need to cook much. Just heat the entire jar of barbecue sauce in a skillet, add the shredded Beyond Meat Chicken-Free Strips, and cook on your stove top for a couple of minutes until they are hot.
I served it with a purple cabbage and carrot cole slaw and some oven baked fries. It may not have been a fancy dinner, but it sure was good!
The full recipe will follow once I’ve perfected my homemade barbecue sauce – but Sticky Fingers sure worked well in a pinch!
