I am always on the lookout for new products. Although I have been using WestSoy Seitan for years, I was delighted to recently discover a new brand – Upton’s Naturals. Their Italian Seitan looked intriguing, spiced with garlic, fennel, onion, oregano, and black pepper.I gave it a try in my recipe for Bolognese sauce (page 39 of Fool a Carnivore) in place of both the sausage and grounds and was very pleasantly surprised at the meaty texture and hearty flavor. Make sure you crumble it well for best results. I didn’t sautée it first but just added it directly to my simmering sauce. I also eliminated the bread and milk, and sliced my mushrooms very thinly instead of mincing them. Although my family loves the recipe in my book, we thought this version was easier and still delicious. We served it over ziti – hence the alliterative title for this post – Meaty Ziti!
