There’s no getting around the fact that most guys love meat. That’s why I took my family to a nice Father’s Day brunch at The Liberty with plenty of the “real stuff” (i.e., fried chicken for Bill and roasted pork loin for Nick). The problem was – what to make for dinner? Since cooking meat is not an option for me, I tried to think of the “meatiest” most guy-friendly menu for dinner. After skimming through Fool a Carnivore for inspiration, I decided that my mini meatloaves with garlic mashed potatoes and roasted carrots would be a hearty satisfying dinner.I made two small changes from the recipe in my book. Since Light Life Gimme Lean Beef is getting hard for me to find, I substituted Light Life Smart Ground, which worked well. The second change was making a lot more of the sauce so that I could really slather it onto the meatloaves as they baked in the oven, while still having plenty for the table.
