After lots of good feedback on my Pesto Chicken recipe from Fool A Carnivore, I made it tonight with a pepper crusted goat cheese instead of mozzarella and eliminated the pine nuts. It adds a much more sophisticated flavor to what has become a family favorite in our home. We paired it with a lovely wine from Spain called Viñademoya. The 2006 vintage was rich and velvety and was a great foil to the Pesto Chicken. Try it and post a comment below about what you think!
