The beginning of each new year is a time about resolutions and goals.
One of my goals in 2015 is to waste less food.
Our son brought home on winter break from college a barely touched clamshell of Earth Farms Organic Spinach. Although the spinach was past its “best by date,” I took it as a challenge to make progress on my goal to waste less food. I knew that the quality of the spinach was not good enough for a salad, but I thought it could still work for a cooked pasta dish.
Since I’m still recovering from the holidays, I am all about easy. I used a spare container of Alouette Garlic and Herbs Light, along with a package of Quorn Chicken Tenders to create a simple, easy, and tasty way to make good use of that clamshell of aging spinach.
