I topped my homemade pizza last night with red peppers, cherry tomatoes, fresh mozzarella – and you guessed it – Tofurky Pepperoni Slices. Did they fool my two carnivores?
Unfortunately, not. Perhaps I added the pepperoni slices a bit too early. I wanted them to bake for a few minutes under the lovely fresh mozzarella, but next time I will add them later. (The package suggest no more than two minutes of cooking time, so it is my fault that I ignored those instructions.) My husband thought that the pepperoni slices had a very good flavor straight out of the package with just the right hint of spice, so I will definitely give this idea another try.

Even though my carnivores weren’t fooled, they both thought the pizza was very good. They didn’t say boo about the fact that the dough was whole wheat, and both of them ate all their salad, so I count this as a fairly healthy weekday meal.
Consider using the Tofurky pepperoni slices as an alternative to traditional beef or pork pepperoni for another reason – your health! The vegan version contains no nitrates or MSG, is lower in calories, fat, cholesterol, and sodium, and higher in fiber. Although there are a few versions of beef or pork pepperoni that are nitrate-free, most pepperoni contains nitrates which have been linked to Alzheimer’s Disease, Diabetes, and Parkinson’s Disease.
I don’t know about you, but I pray those three diseases never afflict my family, so that’s reason enough for me to choose nitrate-free products.
