I never know what is going to be appealing when I sit down to blog or post an update on my Facebook site. I’m thrilled that my simple Vegan BBQ post has been my most viewed post to date! BTW, the home fried potatoes, made under the broiler, with very little olive oil, were the perfect accompaniment to the BBQ. Just cube your peeled (or unpeeled) russet potatoes and either boil or microwave them for 5-6 minutes. You want the cubed potatoes to just start to soften, but not be fully cooked. Drain them, and toss well with a tablespoon or two of extra virgin olive oil, sea salt, freshly ground pepper, and a little garlic powder (or a few grinds of my Drogheria Alimentari Garlic Mill from Italy, which produces pungent freshly ground garlic powder). Spread in a single layer on a lightly oiled baking sheet and put under a broiler set to low. Broil for about 5-6 minutes and turn them over to cook the other side. And then, do it again! I cooked my potatoes for a total of about 20 minutes to get that golden hue. Make sure to watch them carefully! The potatoes were crispy on the outside, and had a lovely tender texture on the inside.
This was a deceptively simple vegan dinner with a big, satisfying taste. Still working on writing the BBQ recipe and have had a lot of people asking me for it. Please know that when I create something from scratch, I usually make it at least three times to work out all the kinks in the recipe. So, please stay tuned – it will be worth it!
